Over Easter weekend I had the most amazing potatoes ever! I am seriously ruined for all other taters. They are creamy and packed with flavor. Make these for your next family get together and you will knock their socks off.
6-9 potatoes depending upon size
1/2 C margarine
1 C cream of chicken
1 1/4 C sour cream
1/3 C chopped green onions
1 1/4 C grated cheese (we used sharp cheddar)
Preheat oven to 300 degrees. Boil potatoes and let cool. Combine soup, margarine, sour cream, and cheese. Peel and shred the cooled potatoes and mix with the sauce. Stir in the chopped green onions and place in 11 1/2x8x2 in casserole dish. Bake for 35-45 minutes.
