The flu has hit our house in full force. It took me out first with a roundhouse kick to the nose and once I managed to rally Matt went down for the count. By that point I was so sick of chicken noodle soup I couldn’t bring myself to make it one more time. So amidst kleenexes and my new obsession with Alias I devised a version of tortilla soup light enough to handle on our sick stomachs, kick of spice to clear up some congestion, and delicious enough to tempt our appetites. May I just say…NAILED IT! Hopefully you have all seen Pitch Perfect or I just sounded really dumb. I seriously liked this soup so much I made a second batch to freeze for later.
~ 2 lbs chicken (I used a rotisserie chicken from the market)
3 cans chicken broth (~8 Cups)
3 garlic cloves
1 large white onion
1 can of Rotel ( I used Hot)
1 packet taco seasoning (Spicy)
1 chipotle chile in adobo sauce ( I recommend using a can of La Costena your local grocer should carry it)
Lightly saute diced onion, jalapeño, chipotle chile, and garlic. Add broth, can of rotel, taco seasoning, and shredded chicken. reduce heat and let simmer for twenty minutes. Serve as is or garnish with avocado, cilantro, cheese, tortilla strips, and/or lime wedges.
In other news I am starting to suspect that Titan made us sick. He was way too willing to take full advantage of our invalid status.
